EaDeaux’s Cajun Cocina food truck offers a combination of the best dishes from Arcadiana (the Southwest region of Louisiana) with a touch of Houston Tex-Mex. Located at 2919 Leeland Street, EaDeaux’s history is as in

teresting as the menu that brings a burst of Cajun flavor to the growing EaDo neighborhood.

 

Owners Jason and Starr Harry’s culinary venture began with their first business

, EaDo Hand Carwash, in 2016. While many of their clients waited for their cars to be washed, they frequently sought Jason and Starr’s advice on local eateries. 

 

Unfortunately, there weren’t many options to fit client preferences. EaDo was still a relatively new neighborhood at the time, so they took matters into their own hands and created EaDeaux’s Cajun Cocina.

 

The menu is based on the foods Jason and Starr grew up with, though the pair wanted to keep local preferences in mind, too. The food is primarily based on Acadiana’s best Cajun dishes, which have a distinct style and flavor from well-known New Orleans Creole food. 

 

Jason and Starr have even made it clear on their website that even gumbo looks and tastes different in Lafayette, Louisiana than what you’ll find in New Orleans. When you combine gumbo with tortilla chips, you get the Tex-Mex mix. This is known as the “must try” dish on the menu.
